A very special tip is pasta with red pesto made from sun-dried tomatoes, but it can also be used to flavour sauces or to dress antipasti and salads. The dedicated chef has a free hand with this lovingly produced delicacy.

Sun dried Tomatoes
Only fully ripe fruits, which usually contain less juice, are used for our ADRIA product "Dried tomatoes". After drying, the dark red pieces are marinated in oil and flavoured with wine vinegar, salt and Italian spices.
Round and long tomatoes are used for tomato drying, e.g. the "Pozzano" bottle tomato. The tomato is washed mechanically, cut lengthwise into halves and subjected to a drying process lasting several days in the blazing sun, which is successful as soon as no more liquid escapes under pressure.
Dried tomatoes from ADRIA (2300 g) are packed in a state-of-the-art plastic tin made of polypropylene (PP) which, unlike glass containers, cannot break. This product has a shelf life of at least two years (best before date) from production.
Ideal for Italian pasta classics such as minced meat ragù, amatriciana with bacon or arrabiata with chilli peppers. Connoisseurs also appreciate salsa pronta as a base for preparing various meat and fish dishes.

Tomato sauce
A salsa pronta is a typical Italian tomato sauce with a so-called "soffritto". This is used to refine the flavourful tomatoes as a cooked sauce.
An Italian soffritto means that diced carrots, onions and celery are first sautéed separately in oil. This delicious mixture is then added to the already intensely flavoured tomatoes and gently heated. The result is our ready-made, typical tomato sauce.
This delicious product contains no flavourings, preservatives or colourings and is ready to eat. The ADRIA premium tin (size: 2,650 ml; 8.5 - 9 °Bx) offers a minimum shelf life (MHD) of 3 years from production.
Tomato paste is a top-class flavour enhancer: for meat sauces (Bolognese), for fish dishes, for stews or pies and, of course, for refined sauces and even soups. There are no limits to the imagination in the kitchen. Even savoury focaccia creations with tomato paste are allowed.

Concentrato
Our double-concentrated tomato puree brings out the best in the fruit and offers the strongest flavour of the tomato. Concentrates increase the respective intensity of flavour. The product impresses with its dark red colour and full-bodied consistency.
The same process applies to tomato puree as for passata and pizza sauce - but with a much higher proportion of raw tomatoes. Fresh, ripe tomatoes are strained whole, then concentrated several times with the help of heat and reduction. Pasteurisation then takes place by means of rapid, brief heating to around 90 °C. The result is a thick, creamy texture.
Around 6 kg of fresh tomatoes are needed to produce one kilogramme of tomato puree. Depending on the packaging, the best-before date is 24 or 36 months from production. The Brix degree, i.e. the proportion of dissolved sugar in the liquid, is 28/30 °Bx for these ADRIA products in the 850 ml and 4,250 ml cans. The higher the Brix, the "higher quality" the product is for the chef; see also our PMM College "Brix".
This typical pizza sauce from ADRIA is a "must" for every pizza. It can even be diluted without losing its consistency.

A strained and concentrated end product (flavoured or unflavoured) made from fresh ripe tomatoes. The product is thick and somewhat uneven, but all the more original for it.
The same process is used here as for passata production. However, around 2.5 kg of raw ingredients are required here. In addition, the sieve through which the whole tomato is pressed with all its components is much coarser-meshed (grid size: 1 - 4 mm). This means that the seeds and skin also end up in the final product, which is intentional and makes the sauce thicker.
The high concentration of this pizza sauce allows a good yield in the kitchen. A Brix content of 12 - 14 °Bx gives the product a certain creaminess without diminishing its fruitiness. We offer our pizza sauce - unflavoured or with spices - in a bulk tin (4250 ml) with a shelf life of 3 years from production.
Passata is recommended as a warm sauce for many pasta dishes, they only need to be heated briefly. Passata already has a very creamy consistency. However, it can also be used for soups and, of course, on pizza. Passata can also be enjoyed cold (with fresh basil, for example).

Strained tomatoes
Pureed tomatoes, also known as tomato purée, usually have a creamy, uniform texture, a bright red colour and a sweet taste with a slightly fresh, spicy note. Whole tomatoes from the Emilia Romagna region in northern Italy are used for processing.
For the passata, whole tomatoes are processed directly from the field, i.e. they are produced from the first line. Speed and the utmost care play the most important role in the quality of the end product. The whole tomatoes, including skin, seeds and fibres, are mechanically pressed through a narrow-meshed sieve (0.6 - 0.8 mm) using centrifugal force. The result is a very finely strained end product that no longer contains any particles, but instead has the full flavour of the ripe tomato. The juice of the refined tomatoes is collected and concentrated at a constant high temperature (over 60 °C). The viscous concentrate is then briefly heated to over 90 °C (pasteurised) and immediately packaged. This gentle preservation process preserves the flavour and freshness of our composite carton.
One kilogram of passata requires around 1.8 kg of fresh sun-ripened round tomatoes from the north of Italy. The passata contains no added sugar and does not require any extra preservatives as it is pasteurised. ADRIA passata is available in a practical 1000 ml Tetra-Pak with approx. 7 °Bx (Brix). This product is also space-saving to dispose of and easy to open. The minimum shelf life (MHD) from production is 30 months.
Polpa Fine is used for pizza and sauces and is the basis for many surprising creations. This is why experts in the kitchen like to use the product for savoury meat and vegetable dishes or for new pasta compositions. The pulp can withstand prolonged cooking and high temperatures (even in the oven).

Tomato pulp
This fine and tender pulp - rounded off with a little tomato juice - brings all the freshness from the field and the sun-soaked flavour into the kitchen. The consistency is slightly creamy and the colour of this unique tomato product is bright red.
Only the best fresh tomatoes are peeled in a very gentle process, first cut into slices, then diced and then chopped again to a chunk size of around 0.4 or 0.6 mm.
We offer our popular ADRIA tomato pulp in 2,650 ml cans with a best-before date of 3 years from production with at least 7 °Bx.
Same application as Polpa Fine, e.g. pizza toppings and other quick large-area processing, especially in commercial kitchens.

Fruit pulp
This form of fruit pulp differs from the usual pulp in the production process. The product is specially tailored for use in commercial kitchens.
The fresh tomatoes are first cut into slices rather than cubes and then pressed through a sieve (grid size 8 x 8 to 12 x 12 mm).
As a highlight for pizzerias and canteen kitchens, we offer ADRIA Estruso tomato pulp in the 10 kg bag-in-box (resealable) with a best-before date of at least 30 months. Special advantages are the practical handling when opening and the space-saving disposal. The product has a Brix content of at least 7 °Bx.
For pasta dishes, soups of all kinds and as a flavourful base for delicious tomato sauces.

Cubettato
The starting product for our delicious pizza tomatoes is round tomatoes, which are chunky and juicy when they come out of the ADRIA tin onto the kitchen table.
The fresh tomatoes are cut mechanically with knives into pieces measuring approximately 14 x 14 mm or 16 x 16 mm and are therefore somewhat smaller than the typical so-called diced tomatoes (see above) measuring 20 x 20 mm. Cubettato, however, are definitely larger tomato pieces than tomato pulp (see below)

The juicy hill tomatoes are recommended for sauces, as a salad garnish or as a garnish on baguettes and pizza - and even on cakes.

Cherry tomatoes
Hill tomatoes, often also known as cherry or mountain tomatoes, are small, round and have a sweet flavour. Hill tomatoes from ADRIA swim in their own juice and taste particularly savoury.
The product is processed fresh as whole, unpeeled tomatoes. The Ciliegion and Datterino varieties are most commonly used for production. They are available in different colours such as red and yellow. The product is processed fresh as whole, unpeeled tomatoes. The cubes of firm meat in the juice are suitable for sauces in which you still want to see the pieces and feel them in your mouth. They are popular for use in ratatouille or chilli con carne dishes. And bruschetta with diced tomatoes is always a favourite with Italian fans.

Tagliato a dadini
Diced tomatoes are a perfect convenience product for canteens and professional kitchens. The diced pieces are beautifully large and evenly cut in the dimensions 20 x 20 mm.
The fresh, peeled tomatoes are cut into cubes and filled cold into ADRIA tins with a little tomato sauce. Pasteurisation only takes place in the can afterwards so that the cubes are not damaged.
The best before date (BBD) of the ADRIA tin of diced tomatoes (3,100 ml) is 36 months. Brix: approx. 5.5 °Bx.
"Real" Italians swear by pelati for pizza and pasta. But not only them: All Italy fans also like to use peeled tomatoes or pelati to make flavoursome sauces for Mediterranean meat and fish dishes. Long and short cooking times are possible. Anything goes with this top quality product from ADRIA.

The Roma variety (long tomatoes from the south of Italy) is used for peeled tomatoes, also known as pelati. It is even sweeter and more delicate in flavour than the round tomato and has a naturally red colour.
Peeled tomatoes from ADRIA are available in three sizes from the 425 ml can to the 850 ml and 2,650 ml can with different Brix contents from approx. 6 °Bx. Our large can has an extra high Brix content for quick cooking and a high yield in the professional sector. The best before date for all sizes is 3 years.
Carefully selected whole tomatoes are carefully peeled, gently steamed and filled into the ADRIA tin with thickened juice. This ensures the exceptional flavour and freshness of the product.
