The spiciness of chillies - and therefore also of jalapenos - has even won a scientific award: research into human perception of spiciness led to the award of the Nobel Prize for Medicine in 2021. The key substance here is capsaicin - the very ingredient that gives chillies their heat.
Capsaicin stimulates certain pain and heat receptors in the body. How intensely we perceive spiciness is measured in Scoville Heat Units (SHU).For comparison:
- Paprika: 0 SHU
- Jalapenos: approx. 2,500-10,000 SHU
- Tabasco sauce: approx. 1,000-2,500 SHU
Jalapenos are mild to medium-hot chillies. The heat is mainly in the seeds and the light-coloured inner skin. Green jalapenos are harvested unripe, which means they retain their firm structure, green colour and a fresh, slightly tart flavour.
