Adriatic Bowl

Here is the full recipe to follow: 

For the couscous:

  • 180 g couscous (alternatively: cereals/rice/pasta)
  • Salt
  • 1 tsp olive oil

For the roasted chickpeas and the hummus dressing:

  • 1 tin of Adria chickpeas
  • 2 tsp olive oil
  • sweet paprika powder
  • Garlic powder
  • Salt
  • Pepper
  • 1 tbsp tahini
  • 3-6 tbsp water
  • 1 squeeze of lemon juice
  • ground cumin

Other components:

  • some olives from Adria
  • ½ tin of sweetcorn from Adria
  • 1 tin of tuna in oil from Adria
  • 2 handfuls of fresh spinach leaves
  1. Mix the couscous with twice the amount of boiling water, a little salt and olive oil in a pan. Put the lid on and leave to soak.
  2. Drain the chickpeas. Marinate two thirds of them with olive oil, paprika powder, garlic, salt and pepper and roast in a pan or in the oven until crispy.
  3. Mix the remaining chickpeas with the tahini, olive oil, lemon juice, water, ground cumin, salt and pepper to make a thick hummus dressing.
  4. Arrange the couscous in deep bowls according to the number of portions. Arrange the roasted chickpeas, olives, sweetcorn, tuna and spinach leaves on top in segments. Drizzle everything with sauce and serve immediately.

 

Tip: A fruity sauce is also perfect. Simply puree our Adria fruit cocktail with yoghurt, salt and pepper and top the bowls with it.
